We recommend that you properly care for your knives by keeping them clean and sharp. Not only is a dull knife difficult to use, but the extra pressure needed to cut with a dull blade make accidents more likely, and a cut with a dull knife is usually more painful and severe than a cut with a sharp one!
So when should you bring (or send ) your knife to us to be sharpened? Well, if your steel or other edge maintenance tool does not seem to be working, it's probably time to bring ( or Send ) it to The Knife Shop to be reground.
Depending on how your knife is made, it will need to be either hollow ground or hand rolled. To Illustrate the difference between these two types of grinding, we've included a brief summary, below The Images to the left show a cross section of a knife blade to demonstrate the difference in the shape of the edge between hollow ground and hand rolled blades.
Hollow Grinding
Most Knives are stamped, shaped and tempered out of flat stock. Our machines are state of the art. We hollow grind both sides of the blade to .018 of an inch, then hone a 35º angle. This edge will be easy to maintain with a steel or edge-maker, giving you a precise, extremely sharp edge.
Hand-Rolled Grinding
All forged knives have a rolled edge. This means that a blade is thicker at the back and top then tapered toward the edge and tip of the knife. We hand grind , polish and hone the blade back to give a professional strong, guaranteed-sharp edge.
